First requirement was a chocolate cake. We used this simple yet delicious recipe from Better Homes and Gardens (Feb. 2011):

Double Chocolate Cake


You’ll need:
  • 3 eggs
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 3/4 cup butter, softened
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 1/2 cups milk
  • 3 ounces dark or bittersweet chocolate, grated
  • 1 recipe Chocolate Cream Cheese Frosting or Vanilla Sour Cream Frosting (recipe below)
Directions:1. Allow eggs to stand at room temperature 30 minutes. Meanwhile, grease three 8×1-1/2-inch round cake pans. Line bottoms of pans with parchment paper. Grease parchment paper and lightly flour pans; set aside. In medium bowl stir together flour, cocoa powder, baking soda, baking powder, and 1/2 teaspoon salt; set aside.2.
